How do you make cambodian fried rice?

Corrinne Ruozzo: Like any other ethnic cuisine fried rice, overnight rice is better for bai lieng (fried rice in Cambodian) You saute garlic, shallots (dish it out aside) In the same wok, you add in your seasoning. This way, your fried rice will taste better since the oil is infused with the garlic, onions, salt, sugar, sauces you put in. If you want to add meat, seafood or poultry, add it now. Stir till cooked and if too dry, add a little broth or water. Then add in your rice. Keep stirring. In the restaurant, they have very high heat, so they can toss the rice to perfection. Add beaten egg and keep tossing until every grain of the rice is covered with the beaten egg. The only difference with bai lieng and chinese fried rice, is they spiced the fried rice with sambal olek (chili paste) and before dishing out the fried rice, they add beans sprouts .*...Show more
