Cole Desher: yes goose has more grease so need to cook it differently and usually bigger too so needs a longer time
Theresia Fashaw: I have cooked many when I was chef, they both dark meat and depending on the breed very nice, I have also cooked wild shot or trapped ones to, I would elevate it on a rack, so it cooks better, the fat is nice reserved to cook veg or potatoes in, they both need about 2-3 hours to roast well, and can be served with the same trimmings as a turkey if you wish
